Otong soup is a rich vegetable soup mostly eaten by people from Calabar, the South Eastern part of Nigeria. Preparing it is easier than you thought. Learn how!

Ingredients needed for this special delicacy include:

1. Assorted meat, oxtail, tripe, ponmo, bokoto, and bushmeat.

2. Dry fish, stock fish.

3. Periwinkle.

4. Dry prawns.

5. Ground crayfish.

6. Ground pepper.

7. Onions.

8. Pumpkin leaves.

9. Fresh Okra.

10. Etinkrin and Uzouza leaves ( optional).

11. Palm oil.

12. Seasoning cubes.

13. Salt to taste.

Step 1

Wash your meat and bokoto thoroughly and place in a big pot. Slice some onions into it and add some ground pepper.

Step 2

Next, place your mixture on a stove or gas cooker and let it cook for about 20 minutes.

Step 3

Wash your smoked dry fish with enough salt, then soak it in boiling water for 10 minutes. This will help get rid of any insect or germs in the fish. Then rinse with cold water.

Step 4

Add your stock fish, dry fish, periwinkle and prawns to the meat. You can add more stock if you like. Let it cook for about 10 minutes.

Step 5

When you are sure it is done, add your crayfish, palm oil, and Etinkirin leaves

Step 6

Stir properly and allow it to boil for another 10 minutes before putting it down.
